Phoenix Oyster Mushroom Pasta
1 lb Oyster Mushrooms (any variety)
1/2 lb Pasta Noodles
3 cloves Garlic
3 tbsp Butter
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 cup Heavy Cream
1/4 cup Parsley
1/4 cup Mozzarella or Parmesan Cheese
Cook the pasta according to instructions. Save 1/2 cup of pasta water and drain.
While the pasta is cooking. Melt butter in pan over medium heat and lightly fry the mushrooms until golden. Add garlic, salt and pepper. Stir for 1-2 minutes then add heavy cream, pasta water and parsley.
Toss mushroom sauce with pasta and serve, topping with cheese to taste.
